Easter Cake Pops!

With a simple cake mix, frosting, and candy melts, they’re easy to make and fun to decorate! You can customize the flavors, colors, and designs, from cute little chicks to pastel Easter egg styles.

Equipment

  • 9x13 Baking Pan
  • Large Mixing Bowl
  • Lollipop Sticks
  • Cake Pop Stand You can also use object you can stick the Cake Pops in!
  • Piping Gel optional or details

Ingredients

  • 1 box of cake mix (any flavor you like, but red velvet adds a fun Easter twist!)
  • eggs, water, and oil (Follow the cake box mix instructions. )
  • 1 can of frosting (cream cheese or vanilla works great, but feel free to get creative!)
  • 1 package of candy melts (white, yellow, or pastel colors for an Easter vibe)
  • Lollipop sticks
  • Sprinkles (optional) (colored sugar, or edible decorations (for fun, think Easter-themed like tiny candy eggs, sugar flowers, or even mini chocolate chips for eyes on the chicks!))

Instructions 

Bake the Cake

  • Start by preparing the cake mix as per the instructions on the box. Bake it in a 9x13 inch pan or as directed. Once the cake is baked, let it cool completely.

Crumb the Cake

  • Once the cake is cool, crumble it into a large bowl using your hands or a fork. You want to break it down until it’s in fine crumbs. The more crumbles, the better for shaping the cake pops!

Mix with Frosting

  • Add about 1/2 to 3/4 cup of frosting to the cake crumbs. Mix it together until you have a dough-like consistency. You want it to stick together when you form it into a ball but not be too wet. You can always add more frosting if needed.

Shape the Cake Balls

  • Roll the cake and frosting mixture into 1-inch balls, pressing them firmly together so they hold their shape.

Insert the Sticks

  • Melt a little bit of your candy melts (about 1/4 cup) and dip the end of each lollipop stick into the melted candy before inserting it into each cake ball. This will help the stick stay in place when dipped later.

Dip and Decorate

  • Now for the fun part! Melt your candy melts in the microwave (be sure to follow the package directions). Once melted, dip each cake pop into the candy coating, making sure it's fully covered. After dipping, decorate! If you're making chick cake pops, use yellow candy melts and add little details like tiny edible eyes or even a small orange fondant piece for the beak. Add sprinkles or colored sugar to give them a little sparkle.

Let Them Set

  • Place the cake pops into a foam block or a stand to help them dry and set. Let the candy coating harden for about 30 minutes to an hour.

Serve and Enjoy!

  • Once the cake pops are completely set, they’re ready to serve! They’re perfect for Easter gatherings, or just to enjoy as a sweet treat on a spring afternoon.

Notes

  • The calories range from 150-200. It really all depends on the cake box mix that you use.
