When Crumbl Cookie first blew up online, I was smitten—despite the fact that I’ve never even stepped foot in one of their stores. I mean, who wouldn’t be tempted by rotating weekly flavors and cookies the size of your face? As someone who loves baking (and let’s be real, a good frosting moment), I couldn’t resist the idea of recreating one of their most viral flavors—the iconic Pink Sugar Cookie.

The Pink Sugar Crumbl Cookie is a thick and soft sugar cookie with delicious pink icing on top. The cookie has a deliciously sweet almond flavor too, perfect for our almond cookie lovers out there! This recipe is also for the people who do not have a Crumbl cookie store nearby like me, and want to try to make the cookie themselves at home! This copycat recipe would also be a really good recipe you can make to give to a friend who loves Crumbl cookie just as much as you do.

Why You’ll Love This Recipe!

  • It’s inspired by the viral Crumbl cookie, but made for everyday baking
  • Uses pantry staples (no chilling for 24 hours—bless)
  • Has that sweet almond touch—but can be made vanilla if that’s more your vibe
  • Looks adorable and makes a perfect gift or “just because” bake

In this recipe, we will be using simple ingredients for both the sugar cookie and the icing. For the cookie base I will be using all-purpose flour, granulated sugar, softened unsalted butter, baking soda and powder, a pinch of salt, almond extract for the infamous almond flavor, and of course, what is a cookie without vanilla extract!

Step-By-Step Instructions

Step 1: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
Step 2: In a large bowl, cream together the butter and granulated sugar until light and fluffy.
Step 3: Add eggs and vanilla extract, mixing until smooth and combined.
Step 4: In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
Step 5: Gradually add the dry ingredients into the wet mixture, stirring until a soft dough forms.
Step 6: Scoop about 2–3 tablespoons of dough per cookie and place on the baking sheet. No need to flatten—they’ll puff up beautifully.
Step 7: Bake for 10–12 minutes, or until the edges are just set. The centers should still be slightly soft. Let them cool completely before frosting.

💖 Pink Almond Frosting

Step 5: Spread or pipe onto cooled cookies, and enjoy!
